Hola Juan,

My first suggestion would be to put a thermocouple (TC) inside the tube. If the tube must be sterile, sterilize the TC once its installed. On the other hand, if that isn't an option, then I would recommend setting up a couple of sacrificial test setups (tubes with water flowing) with internal TCs and surface TCs (or IRs or whatever) and see if the surface temperature of the tube correlates to the internal temperature in a repeatable way. Even if it isn't linear, you can still produce a lookup table.
